What kind of dates does Aurum sell?
We sell Tunisian Deglet Noor dates in three forms — whole pitted dates, date paste and date sugar — all made from the same fruit. Deglet Noor is prized for its honey-caramel flavour and tender, never mushy texture. Shop the range.
What is the difference between Deglet Noor and Medjool dates?
Medjool dates are large, very soft and intensely sweet. Deglet Noor are a touch smaller and more tender-firm, with a cleaner honey-caramel flavour that works for both snacking and cooking. We compare them in detail in our guide: Deglet Noor vs Medjool.
Where are your dates grown and packed?
Our dates are grown in our own groves in Tunisia and processed at our facility there. They are then shipped in bulk and packed into retail pouches in Australia, with orders dispatched from NSW.
Is anything added to your dates, paste or sugar?
No. Every product is one ingredient: dates. No syrups, oils, sulphites, glucose coatings, added sugar or preservatives — across the whole range.
STORAGE & SHELF LIFE
How should I store dates in Australia?
Keep them in an airtight container in a cool, dark pantry. Through hot Australian summers, the fridge is your friend — it holds texture and flavour for longer. Airtight storage also keeps pantry moths out of any dried food.
How long do dates last?
Check the best-before date on your pouch. As a general rule, dates keep for around 12 months in a cool pantry and longer again in the fridge.
Can I freeze dates?
Yes — dates freeze exceptionally well thanks to their naturally low moisture. In an airtight container they keep for a year or more. Thaw at room temperature for about 30 minutes before eating.
My dates have white spots — are they still good to eat?
Almost certainly yes. White, dry, crystal-like patches are sugar bloom — natural fruit sugars rising to the surface as moisture settles. It is harmless and the dates are fine to eat. Mould looks different: fuzzy, grey-green and off-smelling — if you see that, discard them. A brief soak in warm water dissolves sugar bloom and restores the surface.
My dates feel firmer than my last pouch. Why?
Dates are a farmed fruit, so softness varies a little between harvests and through the seasons. Ten minutes in warm water brings them back for snacking or blending.
Do pitted dates ever contain pits?
Ours are pitted with care, but with any pitted fruit the occasional stone or fragment can slip through. We flag this on the pack — go gently on the first bite.
DIETARY & CERTIFICATION
Are your products Halal and Kosher certified?
Our Tunisian facility holds independent BRCGS and IFS food-safety certification and produces under Halal and Kosher certification. Certificates are available on request — wholesale buyers can find more on our wholesale page.
Are your products vegan and gluten free?
Yes and yes. Nothing animal-derived is used anywhere in the range, and our nutrition panels show gluten as nil detected.
Can people with diabetes eat dates?
Dates are a whole fruit containing natural sugars alongside fibre. Whether and how they fit your diet is personal — please speak with your GP, dietitian or diabetes educator about portions that suit you.
How many dates count as a serve?
The Australian Dietary Guidelines count 30g of dried fruit as one serve of fruit. Our nutrition panels use a 40g serve — about five Deglet Noor dates.
BAKING & USING
How do I substitute date sugar for regular sugar?
Swap it 1:1 for brown or white sugar in baking. Because date sugar is whole ground fruit — fibre included — it will not fully dissolve in coffee or tea; it is happiest in cookies, muffins, porridge and crumbles. Full ratios and tips: How to bake with date sugar.
What do I use date paste for?
Anywhere a recipe needs binding plus sweetness: bliss balls, brownies, sticky-date pudding, smoothies, dressings and marinades — or simply on toast. Ideas live in From Our Kitchen.
Can I make date paste from your pitted dates?
Absolutely: soak pitted dates in warm water for 15 minutes, drain and blend until smooth. Or skip the food-processor cleanup with our ready-made date paste.

Where do you ship from, and how much does it cost?
Orders are packed in Australia and dispatched from NSW, shipping Australia-wide. Shipping is free on orders over $45.
Will my order be OK in summer heat?
Yes — dates are shelf-stable, so there is nothing to melt or spoil in transit. In very hot months, pop the pouches in the fridge when they arrive.
