If you have been buying energy balls from a store, this recipe will make you wonder why you ever did. Ten minutes, 5 ingredients, no oven and the base is our Tunisian Pitted Deglet Noor Dates, already soft and hand-pitted so there is zero prep involved.
Deglet Noor dates have a slightly firmer texture than Medjool, which actually makes them better for energy balls. They hold their shape without becoming sticky messes, and their caramel-honey flavor pairs perfectly with nut butter and oats.
Ingredients
- 1 cup (about 15) Aurum Pitted Deglet Noor Dates
- 1 cup rolled oats
- 1/2 cup natural almond butter or peanut butter
- 2 tbsp chia seeds
- Pinch of sea salt
- Optional: 2 tbsp dark chocolate chips, shredded coconut for rolling
Instructions
- Place dates in a bowl and cover with warm water for 5 minutes to soften. Drain and pat dry.
- Mash dates with a fork into a rough paste.
- Add nut butter, oats, chia seeds, and salt. Mix until combined.
- Scoop about 1 tbsp and roll into a ball. Roll in coconut or cacao powder if desired.
- Refrigerate for at least 30 minutes before eating.
Storage
Fridge up to 2 weeks. Freezer up to 3 months. Makes 16 to 18 balls.
Variations
- Protein boost: Add 2 tbsp protein powder, reduce oats by 2 tbsp.
- Chocolate: Mix in 2 tbsp cacao powder and 1 tbsp maple syrup.
- Nut-free: Swap nut butter for sunflower seed butter.
