Date Sugar Spiced Overnight Oats with Toasted Pecans

Most overnight oats recipes are fine. This one is the reason you look forward to Monday morning.

The date sugar dissolves overnight into the oats as they soak, infusing every bite with a gentle caramel sweetness that does not spike and crash. The spice blend — cardamom, cinnamon, a hint of ginger — is the kind of combination that smells like somewhere warm and distant. The toasted pecans on top shatter against the creamy oats in a way that is deeply, unreasonably satisfying.

Why date sugar in overnight oats?

Unlike honey or maple syrup, date sugar does not make the oats wet or cloying. It mixes into the dry oats and dissolves gradually overnight, creating a more even, integrated sweetness. Because it retains fibre from the whole date, it also keeps you full significantly longer than refined sugar alternatives.

Ingredients (per serving)

  • 1/2 cup (45g) rolled oats
  • 1 tbsp Aurum Date Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • Pinch of ground ginger
  • Pinch of fine salt
  • 3/4 cup (180ml) oat milk or milk of choice
  • 2 tbsp full-fat Greek yogurt
  • 1 tsp chia seeds

Toppings

  • Handful of pecan halves, toasted in a dry pan until fragrant
  • 1 tsp Aurum Date Sugar, for finishing
  • A drizzle of nut butter (optional but not really)
  • Fresh banana slices or a few pitted dates, halved

Method

  1. In a jar, combine oats, date sugar, cinnamon, cardamom, ginger, and salt. Stir to distribute evenly.
  2. Add milk, yogurt, and chia seeds. Stir well so the date sugar is fully mixed through.
  3. Seal and refrigerate overnight, or a minimum of 6 hours.
  4. In the morning, stir the oats. If too thick, add a splash of milk and stir again.
  5. Top with toasted pecans, a pinch of extra date sugar, banana or dates, and nut butter.

Batch prep tip

Mix the dry ingredients in bulk — oats, date sugar, spices, salt — multiply by however many jars, then portion into individual jars and add wet ingredients each night. Takes 3 minutes.

Variations

  • Chocolate: Add 1 tbsp cocoa powder to the dry mix, top with cacao nibs
  • Tropical: Replace yogurt with coconut cream, top with mango and toasted coconut
  • Protein boost: Add 1 scoop of vanilla protein powder to the dry mix
